Paneer Pepper Pizza

Ingredients: For the Dough

  1. 2 cups Whole-wheat flour (Atta)
  2. 1 tsp active dry yeast
  3. 1 tsp sugar
  4. 1/2 tsp salt
  5. 3/4 cup water
  6. 1 tbsp olive oil

Ingredients: For the Toppings

  1. 200g paneer, cubed
  2. 1 green bell pepper, sliced
  3. 1 red bell pepper, sliced
  4. 1 Yellow bell pepper, sliced
  5. 1/2 cup pizza sauce
  6. 1 1/2 cups shredded mozzarella cheese
  7. 1 tsp red chili flakes (optional)
  8. 1 tsp mixed Italian herbs (oregano, basil, thyme)
  9. Salt to taste
  10. 1 tbsp olive oil
  11. Fresh cilantro or basil leaves for garnish

Method

Prepare the Dough:

  • In a small bowl, mix water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic.
  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it doubles in size.

Prepare the Topping:

  • Heat olive oil in a pan over medium heat. Add the paneer cubes and sauté them until they turn golden brown. Remove and set aside.

Assemble the Pizza:

  • Preheat your oven to 180°C (356°F).
  • Punch down the dough and divide it into two portions. Roll out each portion on a floured surface to your desired thickness.
  • Transfer the rolled-out dough to a baking sheet.
  • Spread a generous amount of pizza sauce over the dough.
  • Sprinkle half of the shredded mozzarella cheese over the sauce.
  • Evenly distribute the sautéed paneer, and freshly sliced bell peppers on top.
  • Add the remaining cheese, sprinkle red chili flakes, and mixed Italian herbs.
  • Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is melted and bubbly.
  • Once the pizza is out of the oven, garnish with fresh cilantro or basil leaves. Slice and serve hot!
